# Method:
01 - In a medium mixing bowl, blend together ricotta, egg, flour, Parmesan, and salt until a soft, slightly sticky dough develops.
02 - Dust a work surface lightly with flour. Divide the dough into four equal portions. Roll each portion into a rope approximately 1/2 inch thick, then cut into 3/4 inch pieces. If desired, roll each piece over the tines of a fork to imprint ridges.
03 - Bring a large pot of salted water to a gentle boil. Add the gnocchi pieces in batches, cooking until they rise to the surface, roughly 2 to 3 minutes. Transfer with a slotted spoon and drain thoroughly.
04 - Melt the butter in a large skillet over medium heat. Add the drained gnocchi and sauté until light golden color develops, about 2 to 3 minutes.
05 - In a small bowl, combine granulated sugar, ground cinnamon, and a pinch of salt. Sprinkle the mixture over the sautéed gnocchi and toss gently in the skillet, allowing the sugar to partially melt and form a glaze.
06 - Serve the gnocchi warm. For enhanced presentation, dust with additional cinnamon sugar or top with whipped cream as desired.
